Croaker Festival Chairman
Candy, a 1996 graduate of Pamlico Community College, has a degree in Environmental Science Technologies.
Candy has a strong sense of volunteering for the local community. Currently she is President of the Committee of 100. She has worked on the CAMA land use plans for the County, for Oriental and for the County Tourism Plan. Her other civic positions have included: former Pamlico Habitat for Humanity board member and site selection chair; liaison to the Oriental Tourism Board; ex-Chairman of the Pamlico County Rural Tourism Council; Chairman of the Oriental Planning Board (01-03); current Town Commissioner. Candy’s focus on the environment resulted in successfully turning two FEMA buyout properties into outdoor wetland education parks with water access.

New spin on chowing down on Croakers
You are contemplating your latest catch of croaker. Tired of the usual fried fare? Try this tasty and healthy recipe which is from the website: Fishing-NC.com.
Croaker and Corn Chowder
(Yield: 4 servings)
-1/4 pound sliced bacon
-1 TBSP butter
-2 onions, chopped
-2 cups water
-1 cup bottled clam juice
-3/4 pound boiling potatoes (about 3), peeled and cut into 3/4-inch pieces
-1 celery stalk, chopped
-1/4 tsp dried red pepper flakes
-1 1/4 tsp salt
-2 cups corn kernels
-1 cup milk
-1 cup heavy cream (Deb’s alternative to the heavy cream is condensed skim milk!)
-1 1/2 pounds Croaker, de-boned and cut into 1-inch chunks
-1/4 tsp black pepper
1. In a large pot, cook the bacon until crisp. Drain the bacon on paper towels and crumble when cooled. 2. Add the butter and onions to the pot. Cook over moderately low heat, stirring occasionally, until the onions are translucent, about 5 minutes. 3. Add the water, clam juice, potatoes, celery, red-pepper flakes, and salt and bring to a boil. Reduce the heat and simmer until the potatoes are tender, about 20 minutes. 4. Return the bacon to the pot. Add the corn, milk, and cream and simmer for 10 minutes. Stir in the croaker and pepper. Bring back to a simmer and cook until just done, about 3 minutes longer.

Tarpon Program 09: Warren Funk and the team of editors, news-gathers, and go-getters securing advertisements have done a splendid job in putting together a top flight program. The program includes an inclusive look at the local arts community. In addition there are articles on fishing – piers, artificial reefs and reeling in the trophy tarpon. In sum an interesting read which, in the coming years, will offer future generations a glimpse of Pamlico life circa 2009.
